One New Years Resolution that I'm sticking to is eating healthy snacks.  I can't stop snacking altogether so it's making healthier snacks instead. 

Came across a vegan website with some snacks that don't taste like you're eating dirt and having to wash it down with a glass of water.

First on the list is....wait for it...Flu-Buster Clementine Creamsicle Smoothie.  Sounds delicious and with us being in the flu season thought we could all use it.

Here's the list of ingredients:

- 1 large ripe banana, peeled, sliced and frozen

- 1/2 small avocado, flesh scooped out, and frozen

- 2-3 Clementines (or Mandarines from Christmas), peeled and broken into segments

- 2 tbsp coconut milk (the cream from top of can)

- 1/2 cup coconut milk (watery kind)

- 1/2 cup almond milk

- 1/4 tsp almond extract

- 1-2 tsp fresh lemon juice

Then put everything into a blender and blend until smooth.  Makes 2 cups. Enjoy!

Now if Salt & Vinegar chips are a weakness like they are for me then I have a healthy alternative for you I'll add tomorrow.
