The healthy snacks as part of New Years Resolutions continues with Salt & Vinegar Chick Peas.
Yup, chick peas that taste good.
I didn't think it could happen either but after making if over the weekend I've found a way to get my Salt & Vinegar potato chips fix but it's way healthier and it won't make the inside of my mouth raw.
Really simple too.
Ingredients:
- 2 cups of canned chickpeas rinsed
- 3 to 4 cups of vinegar
- 1/2 tsp of sea salt
- 2 tsp of extra virgin olive oil
Directions:
- line a cookie sheet with tinfoil and preheat oven to 400F
- put vinegar in a pot, add the chickpeas, add dash of salt, turn on stove fan and maybe open a window...the strong vinegar smell gets to ya
- bring to boil, remove from heat for 15-20 mins
- drain chickpeas and dispose of vinegar
- put chickpeas on cookie sheet, drizzle olive oil over and massage in so thoroughly coated
- bake in oven for 30-35 mins but check at 25 min mark to avoid burning
- remove from oven and let cool, they get crispier as they cool
